Recipe Ingredients for Mexican Chicken Salad

1/2 chicken breast
1/2 pepper
1 clove garlic
60 g lettuce
2 medium tomatoes
1/4 cucumber
1 tsp paprika
1/2 tsp cumin
1/2 tsp coriander
1 tsp chilli powder
1 pinch salt
1 tsp olive oil

Recipe Directions for Mexican Chicken Salad

  1. Mix the coriander, cumin, paprika, chilli powder and salt in a bowl

  2. Slice the chicken breast lengthways and mix with your seasoning, letting it marinate

  3. Slice the peppers lengthways

  4. Finely chop the garlic

  5. Drizzle saucepan with oil

  6. Fry the seasoned chicken with the sliced peppers and garlic for at least 10 minutes

  7. Chop up the lettuce

  8. Cube the cucumber and tomatoes

  9. Lay the salad on a plate

  10. Put the chicken mix on top

  11. Voilą!
