Yummy Chicken and Rice - with a Mexican twist

Recipe Ingredients for Mexican Chicken and Rice Bake

1 cup long grain brown rice
3 cups fat-free low sodium chicken broth
4 boneless, skinless chicken breast
2 cups Corn, Sweet, Yellow
1 cup rotel original
1/2 cup chopped cilantro
2 tbsp lime juice
1/2 cup shredded cheddar cheese

Recipe Directions for Mexican Chicken and Rice Bake

  1. Prepare rice according to directions, substituting broth for water. Brine chicken in salt water for tenderness.

  2. When rice is almost finished (30-40 minutes later), move to baking dish. Mix in Rotel, corn, onion, bell pepper. On top, place chicken breasts. Put cilantro and lime juice over chicken. Cover with foil. Bake for 25-30 minutes at 400.
