Recipe Ingredients for Mexican Chicken

400 g skinless, boneless chicken breasts
348 g diced tomato
100 g red bell pepper, chopped
75 g white onion, chopped
1 tablespoons ground cumin
1 tablespoons lime juice
1 tablespoons chili powder
3 cloves garlic
250 g can black beans, rinsed and drained
1/2 cup corn
2 tbsp cilantro
15 g green onion

Recipe Directions for Mexican Chicken

  1. Preheat oven to 350 - 375 degrees

  2. Arrange the chicken pieces in a 9x13 inch baking dish (for 4 or more chicken breasts) or 8x8 for less (I used pampered chef deep covered baker....)

  3. Combine the diced tomatoes with epicure salsa seasoning. Mix in chopped red bell pepper, cumin, lemon juice, chili powder and garlic.

  4. Drain and rinse the black beans, and add into the mixture. Stir in the corn, garlic, green onion and cilantro. Mix everything well

  5. Pour the mixture over the chicken.

  6. Bake at 375 for 45 OR Bake at 350 for 40 minutes

  7. Serve with rice if desired.
