Recipe Ingredients for Mexican Chicken

2 1/2 pounds boneless chicken breast (boiled)
28 ounces cream of chicken soup
14 ounces Rotel tomatoes
1 cup chopped green pepper
1 cup chopped onion
2 cups cheddar cheese
1 tablespoon garlic
1 tablespoon chili powder
12 ounces doritos

Recipe Directions for Mexican Chicken

  1. Boil chicken until tender and shred.

  2. Mix together the soup, tomatoes, pepper, onion, garlic and chili powders, and 1 cup cheddar cheese.

  3. Grease large Pyrex pan. Line bottom with 1.5 cups crushed Doritos. Place chicken pieces on top and pour the mixed ingredients on top. Bake at 350 degrees for 30 minutes. Remove from the oven and top with the remaining crushed Doritos, followed by the other cup of cheese. Continue baking until cheese melts.
