Mexican Chicken Recipe

Recipe Ingredients for Mexican Chicken

3/4 cup salsa
2 tablespoons olive oil
2 tablespoons lime juice
2 tablespoons tequila
2 cloves garlic, minced
1 pound chicken breast halves, boned and skinned

Recipe Directions for Mexican Chicken

Combine salsa, olive oil, lime juice, tequila and garlic in a plastic bag. Add chicken. Allow to marinate overnight. Prepare Pico de Gallo and set aside for flavors to blend. Place chicken on a hot grill and cook until it measures 160 degrees using an Instant read thermometer. Serve with Pico de Gallo, Spanish Rice and Vegetarian Refried Beans.
