Serves 8 people. Recipe comes from The Lady & Sons restaurant in Savannah, Georgia, U.S.A. Very tasty, rich, recipe and easy to make.

Recipe Ingredients for Mexican Chicken

1 can cream of chicken soup
1 can cheddar cheese soup
1 can cream of mushroom soup
10 ounce chopped tomatoes and green chilies
4 cups chicken, cooked, chopped
11 1/2 ounce flour tortillas
2 cups cheddar cheese, shredded

Recipe Directions for Mexican Chicken

  1. In a large bowl, stir together the three different kinds of soup and the tomatoes with green chiles (the Ro-Tel brand is recommended here).

  2. Stir in the chicken.

  3. In a greased 13 by 9 inch pan, layer the tortillas and the chicken mixture, beginning and ending with tortillas (make as many layers as you like).

  4. Sprinkle the cheese over the casserole and bake at 350 degrees for about 30 minutes.
