A lighter version to an easy favorite. Cook on weekend and have a quick meal for the weekday!

Recipe Ingredients for Mexican Chicken

8 oz. nacho cheese flavored tortilla chips, baked
4 chicken breast, skinless, boneless, boiled and diced
10 3/4 oz cream of chicken soup, 98% fat free
10 3/4 oz cream of mushroom soup, 98 % fat free
10 oz Rotel tomatoes
1 small onion, chopped
1 small bell pepper, chopped
1 cup cheddar cheese, reduced fat shredded

Recipe Directions for Mexican Chicken

  1. Mix soup, rotel tomatoes, onion, and peppers.

  2. Crush chips in a 13 X 9 baking dish.

  3. Spread chicken over chips.

  4. Pour soup mixture over chicken.

  5. Sprinkle cheese over top.

  6. Cook for 30 minutes at 350 degrees or until cheese is bubbly.
