Mexican Chicken Recipe

This is one of those great pantry meals that comes together quickly and everyone likes.

Recipe Ingredients for Mexican Chicken

1 lb chicken breast, boneless, skinless
14 1/2 oz diced tomatoes
12 green olives, sliced
1 1/2 tbsp capers
1 onion, sliced thin
1/3 cup chicken broth
8 oz. mushrooms, sliced
1 1/2 tbsp olive oil

Recipe Directions for Mexican Chicken

  1. Saute the chicken in a little olive oil until no longer pink. Take out of sauté pan with juices and let rest.

  2. Meanwhile, sauté the onion in a little more olive oil until transparent. Add the oregano to the onions and finish sautéing.

  3. Add the tomatoes, olives, capers, and chicken broth. Add the mushrooms if using. Simmer for about 5-10 minutes.

  4. Add the chicken with juices, and simmer for another 5-10 minutes until the chicken is sufficiently cooked.
