Mexican Lasagna using chicken and tortillas

Recipe Ingredients for Mexican Chicken Lasagna

1/2 cup cilantro leaves, divided (lightly packed)
8 oz cream cheese
2 cups shredded Monterey Jack Cheese, divided
1 medium onion, chopped
28 oz enchilada sauce
12 corn tortillas (6 inch)
4 cups diced or shredded cooked chicken breast

Recipe Directions for Mexican Chicken Lasagna

  1. Chop cilantro. Microwave cream cheese on high for 30 - 45 seconds or until very soft. Add 1/2 of the cilantro and 1 1/2 cups of monterey jack cheese to cream cheese. Add the chopped onions. Mix well.

  2. Pour 2/3 cup of enchilada sauce over botton of baking dish. Pour the rest of the sauce in a flat bottom pan (like a pie pan).

  3. To assemble lasagna, dip 4 of the corn tortillas into the enchilada sauce and then arrange over sauce in baking dish (overlapping as necessary). Scoop half of the cream cheese mixture over the torillas and spread to cover tortillas. Top with 1/3 of chicken. Repeat layers one time. Dip remaining tortillas into sauce ad arrange over second layer. Top with remaining chicken and onion. Pour remaining enchilada sauce over the last layer and sprinkle with 1/2 cup of monterey jack cheese.

  4. Microwave, covered on high 12 - 15 minutes or until center is hot. Let stand 10 minutes. Sprinkle with additional cilantro. Cut into squares and serve.

  5. Optional: You may wish to add salsa to the cream cheese mixture also or serve with salsa on the side with chips.
