Quick, easy chicken lasagna for a busy weeknight.

Recipe Ingredients for Mexican chicken lasagna

28 oz enchilada sauce
12 white corn tortillas
4 oz queso fresco, crumbled
12 oz shredded chicken breast
1 c chopped onion
15 1/2 oz chili beans
1 tbsp olive oil
1 avocado
1 tbsp lime juice

Recipe Directions for Mexican chicken lasagna

  1. boil chicken and finely shred or chop. Season to taste.

  2. Mince onion and add to chili beans. Heat.

  3. Pour 3/4 c enchilada sauce to bottom of microwave

  4. save casserole dish. Pour remainder into a bowl with a bottom slightly larger than your tortillas.

  5. Place 2 - 3 torillas in the bottom of pan to make bottom layer. Cover with bean mixture.

  6. Dip another 2 - 3 tortillas in reserved enchilada sauce. Layer over beans. Top with chicken and crumbled queso fresco.

  7. Repeat until you are out of tortillas or have nearly filled the dish, reserving some chicken, beans and cheese to sprinkle on top.

  8. Pour leftover enchilada sauce over 'lasagna'. Microwave on high for 15 minutes, then let sit for 10 minutes.
