Recipe Ingredients for Mexican Chicken Dish

1.34 lbs boneless skinless chicken thighs
15 ounces crushed tomatoes
5 cloves garlic
1 1/2 onions
2 tbsp olive oil
1 tsp adobo
1/2 tsp cumin
1/2 tsp cinnamon
14 ounces low sodium chicken broth
1/2 tsp pepper
1/4 tsp cayenne pepper
1/4 tsp paprika

Recipe Directions for Mexican Chicken Dish

  1. Cook onion and garlic in oil. Toss in tomatoes, broth, and spices. Simmer for 20 min or so.

  2. Put in blender or food processor until smooth. Return to pot and add thighs. Simmer until chicken is cooked. Then remove thighs, shred, and return to sauce.

  3. Serve over rice or in a taco/burrito etc.
