Recipe Ingredients for Mexican Chicken Dinner

32 ounce canned black beans
21 ounces chicken breasts
14 1/2 ounce diced tomatoes and green chilies
12 tsp taco seasoning
1 1/2 c brown rice
3 c water, more as needed
1 cup shredded mexican style cheese

Recipe Directions for Mexican Chicken Dinner

  1. In a slow cooker, add the chicken breasts (can be whole and frozen), one can of diced tomatoes and green chilies, 1/2 a pouch of taco seasoning, and 1 C water. Set on high.

  2. After 4 hours, shred the chicken into large chunks, add undrained can of black beans, rice, more water and the rest of the season packet. Continue cooking on high until rice is done and water is cooked down (add more water if necessary).

  3. Add the cheese, stir. Serve with sliced black olives, whole wheat tortillas, lettuce and tomato.
