Recipe Ingredients for Mexican Chicken Corn Chowder

1 1/2 pounds boneless chicken breast, cut in 1 inch pieces
1/2 cup onion, chopped
2 cloves garlic, minced
3 tbls butter
2 chicken bouillon cubes
1 cup hot water
1 tsp cumin
2 cups half and half
8 ounces monterey jack cheese, shredded (2 cups)
14 3/4 ounces creamed corn
4 ounces green chillies, chopped
1/4 tsp tabasco
1 medium tomato, chopped

Recipe Directions for Mexican Chicken Corn Chowder

  1. In dutch oven, brown chicken, onion and garlic in butter until chicken is no longer pink. Dissolve bouillon in water. Add to pan along with cumin, bring to boil. Reduce heat, cover and simmer for 5 minutes

  2. Add the cream, cheese, corn, chillies and tabasco. Cook and stir over low heat until the cheese is melted. Stir in tomato. Serve immediately, sprinkle with cilantro
