OMG - This is sooo Good. Nice warm soup. PERFECT for Cold days. Easy on the Carbs & Cals too!

Recipe Ingredients for Mexican Chicken Corn Chowder

68 oz. Chopped Cooked Chicken (1 Can)
22 oz MexiCorn (2 small cans)
11 1/2 oz Cream of Potato Soup
4 oz Chopped Green Chiles (Optional)
1 tbls dried Cilantro
1 1/4 oz Taco Seasoning
3 c Chicken Broth
16 oz. Sour Cream
8 oz Velveeta Cheese

Recipe Directions for Mexican Chicken Corn Chowder

  1. First Seven ingredients - add together, put in crock pot set on low, and let it go till your ready to fix.

  2. Once you are about ready to serve:

  3. Get a large bowl, put sour cream in.

  4. Take about 2 or 2 ladles of soup broth and add them to the bowl. mix untill everything is equal consistency. (no lumps of Sour Cream)

  5. Add mixture back to overall soup and mix well.

  6. Add Velveeta to soup and mix till melted.

  7. SERVE!
