Recipe Ingredients for Mexican chicken and Brown Rice Soup

1/2 cup frozen corn
10 oz tomatoes with green chilis
2 cans fat free chicken broth
2 stalks celery
1/2 bell pepper
10 oz stewed tomatoes
5 cup water
1 tsp salt
1 tsp black pepper
2 tsp garlic powder
2 tsp onion powder
1 tbs paprika
1 tbs cumin
1 tbsp chili powder
8 oz chicken breast
1/2 cup instant brown rice
1/2 tsp cinnamon
1 cup chopped frozen spinach
4 slices fat free cheese
1/2 cup pinto bean

Recipe Directions for Mexican chicken and Brown Rice Soup

  1. Spicy soup that has three key ingredients to give it a distinct mexican flavor. Blended frozen corn kernals, Fat free cheese slices and a hint of cinnamon.

  2. Add 5 Cups water

  3. Boil chicken breast, Bell Pepper and Celery (Do not chop up)

  4. After chicken is done set aside to cool. Remove Bell pepper and celery. Can cut up and leave in soup if prefer.

  5. Blend Rotel, stewed tomato, and corn

  6. Add to water

  7. Add broth, beans and rest of spices

  8. Shread chicken and add to soup

  9. after 20-25 minutes add slices of of fat free cheese and stir till melted

  10. add hot sauces if want hotter
