Recipe Ingredients for Mexican Chicken and Beans

1 lb. chicken breasts, boneless, skinless
1 1/4 ounce taco seasoning
30 ounces pinto beans, rinsed, drained
13 ounces corn, whole kernel, undrained

Recipe Directions for Mexican Chicken and Beans

  1. Spray 10-inch nonstick skillet with cooking spray. Cook chicken in skillet over medium-high heat 8 to 10 minutes, stirring occasionally, until no longer pink in center.

  2. Stir in seasoning mix, beans, corn and 1/4 cup of water. Cook over medium-high heat 8 to 10 minutes, stirring frequently until sauce is slightly thickened. Serve with tortillas.
