This consistency is more like custard. It's delicious, and almost compltely guilt free!

Recipe Ingredients for Mexican Cheesecake

2 cups milk
1 1/2 cup sugar
8 oz fat free cream cheese
6 eggs
1 tsp vanilla
6 large strawberries

Recipe Directions for Mexican Cheesecake

  1. Heat milk in microwave safe container in microwave until hot, but not boiling.

  2. In blender, add 1/2 cup sugar, cream cheese, and hot milk, blend.

  3. In seperate bowl, whisk eggs and vanilla and 1/2 cup milk mixture together, and then add to milk in blender. Blend until completely smooth.

  4. Pour half of milk mixture into a bowl and set aside. Add strawberries to the mixture in the blender, and once again blend until smooth.

  5. Melt remaining 1 cup sugar in saucepan on stove until it's carmalized and lite amber color.

  6. Pour into bottom of cake pan

  7. Add milk mixture without the strawberries, then the half with. Stir slightly to marble.

  8. Place this cakepan inside another one, and fill the outer cakepan with 2 inches warm water.

  9. Bake in 350 oven for 40-50 minutes until knife inserted in center comes out clean.

  10. Cool completely and tip out onto serving dish, slice and serve.
