Great dish with not only mexican food but also with burgers or steaks on the grill. Also a great dish to make the day before so the flavors fully blend. Just reheat slowly on the stove and adding water in small amounts as needed.

Recipe Ingredients for Mexican Charro Beans

1 lb dried pinto bean
6 strips bacon, chopped
2 cloves garlic, chopped
4 medium tomatoes, chopped
1 medium onion, chopped
12 oz beer
4 cups cilantro, chopped
2 jalapeno peppers, seeded and chopped
1/4 tsp salt
1/4 tsp pepper

Recipe Directions for Mexican Charro Beans

  1. Rinse & pick over the beans.

  2. bring the beans to a boil in a large pot of water - approx 6-8 cups. Boil for 1 1/2 to 2 hours until the beans are tender but still firm.

  3. Before the beans are done, fry the bacon in a large skillet until fully cooked and crispy.

  4. Add garlic, tomatoes, onions and green pepers. Continue cooking with bacon until the onions begin to turn clear and the green peppers just start to soften.

  5. Add the beer to the mixture ans simmer a few minutes (about 15).

  6. Add chopped cilantro and jalapenos to mixture.

  7. Now add the mixture to the beans (do not drain).

  8. The liquid should barely just cover the beans and mixture.

  9. Add salt and pepper to taste.

  10. Just keep on low to allow the flavors to blend.
