Recipe Ingredients for Mexican Caviar

1 serving Pinto Beans
1 serving Blackeye Peas
1/2 cup Black Beans
1/2 cup White Shoepeg Corn
1 cup, chopped Peppers, Sweet, Red
1 cup, chopped Peppers, Sweet, Green
10 oz Green Onions
6 oz Red Wine Vinegar
2 1tsp Olive Oil

Recipe Directions for Mexican Caviar

  1. Drain beans and place in large bowl, with corn peppers, and onion.

  2. Bring to boil on top of stove; oil, vinegar, and honey. Cool to room temp., then add to bean mix, stir, and refrigerate.

  3. Serve with Tostitos scoops.
