15.5 oz Blackeye Peas
11 oz White Shoepeg Corn
15.5 oz Pinto Beans, Organic
4 oz Pimento, Canned
0.5 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Green
0.5 medium raw Onion Red
0.25 cup Olive Oil
4 oz Apple Cider Vinegar, Organic
1 cup Sugars, Granulated
0.5 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
0.5 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
1.764 oz Cilantro leaves
1 pepper Peppers, Jalapeno

Recipe Directions for Mexican Caviar

  1. Bring oil, vinegar and sugar to boil and let cool.

  2. Mix all other ingredients together.

  3. Pour marinade over mixture and refrigerate for at least 2 hours.

  4. Drain before serving and serve with tortilla chips.
