Easy mexican inspired casserole. Great for weeknights!

Recipe Ingredients for Mexican Casserole

1 pound ground beef
1/2 onion
1 can tomato sauce
1 cup corn
5 corn tortillas
4 oz shredded cheddar cheese
1/2 cup Rotel

Recipe Directions for Mexican Casserole

  1. Brown ground beef and onions.

  2. Add tomato sauce, Rotel, taco seasonings,1 cup of water, corn. Mix well and remove from heat.

  3. Pour half of mixture into a casserole dish.

  4. Cut tortillas in half and place them over been mixture. Add remaining beef mixture. Sprinkle cheese over top.

  5. Bake at 350 for 30 minutes.
