Lean ground chicken or turkey can be substituted for the beef. I use baked tortilla chips to save more fat and calories.

Recipe Ingredients for Mexican Casserole

1 pound extra lean ground beef
8 ounces elbow macaroni
1/2 cup chopped onion
1 can condensed tomato soup
14 1/2 ounces diced tomatoes
1 1/4 ounces taco seasoning
4 ounces cheddar cheese
8 ounces tortilla chips
4 ounces sliced black olives
1/2 cup light sour cream
1/4 cup green onions

Recipe Directions for Mexican Casserole

  1. Preheat oven to 350 degrees

  2. Cook pasta in boiling water until al dente. Drain.

  3. In a large oven proof skillet cook ground beef and chopped onion over medium heat until beef is browned. Mix in tomato soup, diced tomatoes, and taco seasoning. Mix in cooked pasta.

  4. Sprinkle crumbled tortilla chips, shredded cheese, and sliced black olives on top.

  5. Bake for 30 to 35 minutes until the cheese is melted. Top with chopped green onions and sour cream.
