Recipe Ingredients for Mexican Casserole

1 pound 95% lean ground beef, browned in pan
24 ounce tomato sauce
10 ounce diced tomatoes and green chilies
3 flour tortillas
2 cups shredded cheese

Recipe Directions for Mexican Casserole

  1. Brown beef in pan, drain of grease.

  2. Mix tomato sauce and diced tomatoes with green chilies in bowl-add Ultra Thick thickener to thicken sauce to desired consistency.

  3. Tear 3-8" flour tortillas into equal sized pieces.

  4. Place a few of the tortillas on bottom of pan so that it covers the bottom.

  5. Layer half the beef, half the sauce, and 3/4 of the cheese.

  6. Place more tortilla pieces on this set of layers.

  7. Layer remaining beef, sauce, and another 3/4 of the cheese.

  8. Place more tortilla pieces on this set of layers.

  9. Top with remaining cheese.

  10. Bake @ 350 degrees for 30-35 minutes.
