Pretty good. Tortillas get a little soggy, so drain everything well

Recipe Ingredients for Mexican casserole

2 cups corn, frozen
1/2 cup onion, sliced
2 teaspoons Cumin, ground
2 teaspoons Dried Oregano
15 ounces Black Beans, drained
14 1/2 ounces tomatoes, diced
7 ounces Green Chilies, chopped
10 Corn Tortillas
1 cup green peppers, diced
1/4 tablespoon oil

Recipe Directions for Mexican casserole

  1. Preheat oven to 400°.

  2. Combine first 7 ingredients, in a bowl.

  3. Place 2 tortillas in an 11 X 7" baking dish. S

  4. poon half the mixture over the tortillas. Repeat with another layer.

  5. Bake till bubbly (20-30 minutes).
