A vegan work in progress, based off of some great frozen meals I've had recently. Easily can turn into a lasagna by layering ingredients with corn tortillas. Hoping to adapt for slow cooker, too.

Recipe Ingredients for Mexican Casserole

1 cup peppers, chili, green, canned
2 cups beans, pinto, cooked
2 cups beans, black, cooked
1 onion, medium
1 cup enchilada sauce
1 cup corn
1 cup mushrooms, sliced
1 cup zucchini, diced
1 cup olives, sliced
2 cups tomatoes, canned, stewed
2 cups
16 oz tofu, diced

add ingredients into same dish and bake 20m at 375
