Vegetarian Mexican Casserole with corn masa pieces.

Recipe Ingredients for Mexican Casserole

2 cups corn flour
1 1/8 cup water
2 tbsp canola oil
2 cups frozen corn
10 ounces diced tomatoes
10 ounces black olives, chopped
2 tbsp minced onion
1 tbsp rice flour
16 ounces enchilada sauce
16 ounces black beans, drained
8 ounces monterey jack cheese

Recipe Directions for Mexican Casserole

  1. Prepare corn masa as directed on the package using 2 cups of corn masa and 1 1/8 cups of water.

  2. Roll out masa and cut into small cubes (about 1cm cubes).

  3. Cook masa in oil until lightly browned and firm.

  4. In a casserole dish add beans, corn, tomatoes, corn masa pieces, black olives, onions, and half of the shredded cheese.

  5. Mix enchilada sauce with rice flour and pour over the casserole and mix gently.

  6. Sprinkle with remaining cheese.

  7. Cover with foil and bake at 375 degrees for about 30 minutes. Remove foil for the last 5 minutes.

  8. Let sit for about 5 minutes before serving.
