Recipe Ingredients for Mexican Brown Rice

1/4 cup olive oil
3 cups diced onion
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon salt
1 green bell pepper
1 teaspoon garlic
2 1/2 cups brown rice, cooked
1/4 cup lemon juice
1/2 teaspoon pepper
14 oz black beans
14 oz tomatoes
1/2 cup cilantro

Recipe Directions for Mexican Brown Rice

  1. heat oil in skillet over medium high heat

  2. saute onion, chili powder, cumin and salt for 5 minutes

  3. Add diced green pepper, saute for another 5 minutes

  4. Reduce heat to medium, add garlic for another 2 minutes

  5. Add rice, lemon juice, pepper, black beans, tomatoes, and cilantro. Toss gently breaking up any lumps of rice. Heat through

  6. Serve with avocado and sour cream or drained yogurt.
