15 oz Beans Black
8 oz Corn, Sweet, Yellow
14 oz Diced Tomatoes, No Salt Added
150 grams Onion Yellow
190 grams Bell Pepper Green
36 grams Peppers, Jalapeno
5 grams Garlic
10 oz Enchilada Sauce
6 oz Muenster Cheese
4 tortilla 8" Premium Flour tortilla 8ct

Recipe Directions for Mexican Black Bean Lasagna - Womans day

  1. Heat oven to 425 F. Heat 2 Tbsp olive oil in a large skillet over medium heat.

  2. Add 1 large chopped onion(150g) and cook, covered, stirring occasionally, for 5 minutes. Add 2 finely chopped jalapenos(36g), 1 red or green bell pepper(190g), chopped or in fine slices and 2 finely chopped cloves of fresh garlic(5g) to the onion mixture. Cook, covered, stirring occasionally, until the vegetables are just tender, 6 to 8 minutes.

  3. Then stir in the 15oz can black beans, drained and rinsed, the 1cup, 8oz, thawed frozen yellow corn kernels, 1 can 14oz diced tomatoes, and 2 tsp chili powder and cook for additional 2 minutes. Stir in 2 Tbsp of lime juice, or fresh and 1 tsp of dried cilantro to the mixture. Cook for 2 minutes. Turn off the heat.

  4. Spread 1/4 cup of 10oz can of enchilada sauce on the bottom of an 12 x 8 inch x 1.5 inch deep baking dish (1.5 to 2 qt). Top with 2 flour 8 inch tortillas. Spread 1/3 of the bean mixture and 1/4 cup of enchilada sauce over the tortillas, then spread 3 oz of shredded or chopped Muenster cheese over the mixture for the first layer.

  5. Add 2 more flour tortillas, the remained of the bean mixture, enchilada sauce and Muenster cheese to the dish to create the second layer.

  6. Place in the preheated 425 F oven and Bake until the lasagna is heated through and the top is beginning to brown, 12 to 15 minutes. Then remove from the oven and let it stand for 5 minutes.

  7. Serve with fresh or dried cilantro topping, and fresh lime wedges, sour cream and hot sauce,if desired on the side.
