Recipe Ingredients for Mexican Beef Hominy Soup

9/10 pounds beef round, chunked
8 ounces onion, peeled and chopped
2 cloves garlic, peeled
1 tablespoon chili powder
1 teaspoon ground cumin
4 cup beef broth, low-sodium
2 cups water
675 grams tomatoes, chopped
542 grams winter squash, raw, chopped
61 grams celery, sliced
220 grams green chilies, roasted, peeled, diced
1 pound hominy, dried
1 teaspoon oregano, Mexican

Recipe Directions for Mexican Beef Hominy Soup

  1. Put beef, onions, and garlic in soup pot with 1/4 cup water. Bring to boil, cover, cook about 15 minutes on medium heat.

  2. Remove cover, raise heat to medium-high, and stir constantly until meat browns. Add chili powder and cumin and oregano, stir about 30 seconds until fragrant. Add water, stir up browned bits, add chicken broth and tomatoes and bring to a boil. Reduce heat to very low and cover, cook about 1-1.5 hours until meat is tender.

  3. Add cubed butternut squash and roasted green chilies and cook about 15 minutes until squash is tender.

  4. Add salt and pepper to taste and serve.
