Recipe Ingredients for Mexican Bean Soup

4 tbsp olive oil
6 medium scallions
20 raw baby carrots, diced
1 clove garlic, minced
15 oz. dark red kidney beans, rinsed and drained
15 oz. pinto beans, rinsed and drained
15 oz. black beans, rinsed and drained
14 1/2 oz. diced tomatoes
11 oz. yellow corn
1 quart fat free chicken broth
400 g raw cilantro, chopped
4 oz. mild green chilies

Recipe Directions for Mexican Bean Soup

  1. Saute onions, garlic, and carrots until onions soften.

  2. Add chicken broth and bring to a simmer.

  3. Add drained and rinsed beans, corn, tomatoes,and chilies and heat through.

  4. Add chopped cilantro.
