Recipe Ingredients for Mexican Bean Salad

15 oz Black Beans
15 oz Kidney Beans
15 oz Cannellini White Kidney Beans
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Green
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
10 oz Fresh Frozen Select Vegetables Sweet Kernel Corn
0.5 medium raw Onion Red
6 Teaspoon Juice
3 Teaspoon Juice
6 serving Sugar Pure Cane
1 tsp Sea Salt
2 clove Garlic
2 oz Cilantro
1.75 tsp Cumin
0.5 tbsp Pepper, Black
1 tsp Chili Powder
0.5 cup Vinegar red wine

Recipe Directions for Mexican Bean Salad

  1. in large bowl combine beans, bell peppers, frozen corn, and red onion.

  2. In a small bowl, whisk together olive oil, red wine vinegar, lime juice, lemon juice, sugar, salt, garlic, cilantro, cumin and black pepper. Season to taste with chili powder.

  3. Pour olive oil dressing over vegetables, mix well. Chill thoroughly and serve cold.
