Recipe Ingredients for Mexican Bean Salad

15 oz. black beans
15 oz. red kidney beans
15 oz. cannellini beans
1 red bell pepper
1 yellow bell pepper
1 c corn kernels
1 red onion
1/2 c olive oil
2 T lime juice
1 T lemon juice
2 T sugar
1 clove garlic
2 tsp. cumin
1/4 c fresh cilantro
1/2 tsp. chili powder

Recipe Directions for Mexican Bean Salad

  1. Drain and rinse the beans. Dice the peppers and onion.

  2. In a large bowl, combine beans, bell peppers, corn, and red onion.

  3. In a small bowl, whisk together olive oil, red wine vinegar, lime juice, lemon juice, sugar, salt, garlic, cilantro, cumin, and black pepper. Season to taste with hot sauce and chili powder.

  4. Pour olive oil dressing over vegetables; mix well. Chill thoroughly, and serve cold.
