Recipe Ingredients for Mexican Bean & Rice Casserole

3/4 cup brown rice
400 ml canned diced tomatoes
540 ml canned kidney beans
1/2 cup celery chopped
1/4 tsp garlic minced
1 tsp chili powder
1/2 tsp cumin
1/4 tsp cayenne pepper

Recipe Directions for Mexican Bean & Rice Casserole

In microwavable dish with cover add rice and diced tomatoes, celery and garlic and spices. Cook on high power 15 minutes, then reduce power to 60% for 20 - 30 minnutes. Add rinsed kidney beans and cook another 5 minutes. Serve wtih a green salad and corn kernels.
