Mexican Bean & Rice Casserole

Recipe Ingredients for Mexican Bean & Rice Casserole

1 tsp olive oil
1/2 cup water
1 onion
2 cloves garlic
1 1/2 cup mushrooms
2 cups green pepper
28 oz tomatoes, crushed
19 oz kidney beans
1 tsp chili powder
2 tsp cumin
1/4 tsp cayenne pepper
3/4 cup white rice
1/2 cup light cheddar cheese, shredded

Recipe Directions for Mexican Bean & Rice Casserole

  1. Heat oil and water in a large frying pan.

  2. Add chopped onion, garlic, mushrooms and green peppers.

  3. Stir and simmer for about 10 minutes.

  4. Add crushed tomatoes, kidney beans, rice and spices.

  5. Stir and cover.

  6. Simmer for about 25 minutes, or until the rice is tender and most of the liquid is absorbed.

  7. Makes 5 servings.
