Mexican Bean Pot Recipe

This is a filling stew like dish great for a warm lunch or a light dinner. It is vegetarian but would be great with a chicken breast for a more filling low carb dish.

Recipe Ingredients for Mexican Bean Pot

300 g haricot beans
100 g onions, finely chopped
100 g carrots, sliced
200 g tomato, de-seeded and diced
2 cloves garlic, crushed and chopped
1 Jalapeno pepper, small finely chopped,
5 g yeast

Recipe Directions for Mexican Bean Pot

  1. Soak the beans in cold water for 24 hours, drain. Place into a saucepan, cover with cold water and then bring the water to the boil. Reduce to a simmer.

  2. When the beans are three-quarters cooked add all the other ingredients.

  3. Continue to simmer until completely cooked.

  4. Serve with a sprinkling of chives if necessary.
