Bean and Corn salad with a Mexican flare.

Recipe Ingredients for Mexican Bean and Corn Salad

2 cups Low Sodium Black Beans (1 can) - drained and rinsed
2 cups Dark Red Kidney Beans (1 can) - drained and rinsed
2 cups No Salt Added Canned Corn (1 can) - drained
8 Green Onions, chopped
1 Cucumber (medium sized), chopped
3 tbsp Olive Oil
3 tbsp White Wine Vinegar
2 tbsp Chili Powder
1/2 tsp Salt
1 tsp Ground Black Pepper

Recipe Directions for Mexican Bean and Corn Salad

  1. In a large bowl, combine the black beans, kidney beans, corn, green onions, and cucumber. Stir and set aside.

  2. In a separate bowl, combine the Olive oil, vinegar, chili powder, salt, and pepper. Stir with a whisk until well blended.

  3. Pour dressing over the salad ingredients and gently mix until the dressing is thoroughly blended into the salad.

  4. Cover and refrigerate at least 4 hours so the flavors blend and marinate the salad.
