Recipe Ingredients for Mexicali Stew

1 tbsp olive oil
1 cup onions, chopped
1/2 cup green bell pepper, chopped
2 cloves garlic, chopped
1 tbsp chili powder
1 tsp cocoa powder
1 ground red pepper, to taste
2 cups tomato, cut in wedges
3/4 cup water
1 1/2 tsp sugar
1 tsp dried oregano
1 1/2 cup kidney beans
1 1/2 cup potatoes, cubed
1 cup corn, 7 oz. can Green Giant Mexicorn
1/4 tsp salt

Recipe Directions for Mexicali Stew

  1. In 3-quart saucepan, heat oil over medium-high heat. Add onions, pepper and garlic; cook, stirring, until vegetables are softened (about 3 minutes). Add chili and cocoa powders and ground red pepper (if desired) and stir until absorbed.

  2. Stir in tomatoes, water, sugar and oregano. Cook 5 minutes, stirring constantly. Stir in beans, potatoes and corn. Bring to a boil, reduce heat and simmer 40 minutes, or until potatoes are tender. Stir in salt.
