Recipe Ingredients for Mexicali Salad

12 oz Baby Lettuce Salad
2 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1 cup Corn, Sweet, Yellow
1 cup black beans
4 oz Nonfat
4 oz Home-Style Fresh Salsa
1 cup Rice, White, Medium-grain, Cooked
1 serving Low Sodium Vegetable Broth
1 avocado

Recipe Directions for Mexicali Salad

  1. Cook rice with veggie broth instead of water, add some garlic and/or onion while it cooks.

  2. Mix yogurt and salsa. set aside.

  3. Chop non bite-sized things to bite size. Mix everything together, then toss it all with salsa/yogurt dressing. Eat.
