So warm and satisfying! Made as healthy as I can. :)

Recipe Ingredients for Mexicali Mac & Cheese

1 onion, large
2 lbs ground turkey breast
15 oz salsa
5 oz cheddar cheese
12 oz mexican cheese, reduced fat
4 oz green chilis
12 oz elbow macaroni, low carb

Recipe Directions for Mexicali Mac & Cheese

  1. Cook onion and ground turkey breast until done.

  2. Put into a crock pot. Add the jars of salsa, and the conqueso cheese (Tostitos makes both - I use Medium in both the conqueso cheese dip & the salsa), I wrote 4 oz cheddar cheese above to make the calculation work - caloric value is accurate.

  3. Add the shredded mexican cheese and can of green chilis.

  4. Cook on low for 4-5 hours.

  5. Before serving, add cooked elbows, stir well. Enjoy with a green salad!
