This dish can be made in 9x 13 pan, or in individual muffin tins, then cooled and placed in freezer for quick meals at anytime! Serve w/sour cream and extra salsa on top.

Recipe Ingredients for Mexian Hot Dish Bake

3 cups cooked brown rice
6 ounces white meat chicken
30 ounces black beans
3 eggs
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon cumin
3 teaspoons chili powder
1 cup corn
3 green onions
3 tablespoons cilantro
1 tablespoon lime juice
1 1/2 cups salsa
1 1/2 cups reduced fat cheddar cheese

Recipe Directions for Mexian Hot Dish Bake

  1. Cook rice according to package directions. Use brown rice, 3 cups total, place any leftovers in freezer for next time need a quick side dish.

  2. In a bowl mix eggs, garlic powder, onion powder, cumin, chili powder, cilantro, onion, and corn.

  3. Drain and rinse black beans, add to bowl.

  4. Drain and flake chicken, add to bowl.

  5. Add rice to bowl and mix well.

  6. Add cheese, and mix again.

  7. Place in greased 9 x 13 pan, and bake 350 degrees for about 1 hour, covered in foil - or spoon into greased muffin tins and bake 350 degrees for about 20-25 minutes. Be sure center of pan/muffin is set to ensure eggs are cooked.
