This salad is filling and refeshingly simple.

Recipe Ingredients for Mexi Salad

16 oz kidney beans, rinsed and drained
15 oz corn, canned and rinsed
1 large zucchini, peeled and chopped
1 large tomato, chopped
1 green bell pepper, chopped
1 med red onion
3 oz olives, sliced
1/2 cup fat free sour cream
3 corn tortillas, toasted and cut into 1" pieces

Recipe Directions for Mexi Salad

  1. Combine first 8 ingredients in a good sized serving bowl.

  2. Meanwhile, bake the corn tortillas in 350 oven until crisp and golden.

  3. Cool tortillas and cut into 1" squares.

  4. Mix tortilla pieces with salad.

  5. Enjoy.
