Something quick and easy that is tasty using fresh or frozen chicken strips without breading

Recipe Ingredients for Mexi-Chicken Strips

3 Serving Chicken
0.3 medium raw Onion Yellow
2 clove Garlic
0.529 oz Extra Virgin Olive Oil
1 tsp Pepper, Black
1/4 tsp Cajun Creole Seasoning
6 tbsp Restaurant Style Salsa
0.5 cup Reduced Fat Mozzarella Shredded Cheese

Recipe Directions for Mexi-Chicken Strips

  1. Slice onion into rings

  2. Heat Olive Oil in fry pan M/Hi

  3. Add mashed garlic and onion allow to carmalize

  4. Add Chicken, and season to taste with pepper, cajun seasoning

  5. Brown chicken add Salsa and turn down to simmer 15 min. or so

  6. Sprinkle with Mozzarella or whatever is on hand

  7. Let cheese melt then remove from heat and let rest for 5 min.

  8. Serve with Tortillas of choice
