ooey gooey rice beans and meat. This could just as easily be made with ground beef or turkey or cubed or shredded chicken breast.

Recipe Ingredients for Mexi Casserole

2 cups cooked brown rice
2 T light ranch dressing
4 T fat free sour cream
3 1/2 servings fat free refried beans
1/4 cup diced green chilies
1/2 lb pork loin roast
3 T taco seasoning
2/3 cup enchilada sauce
3/4 cup cheddar cheese, shredded

Recipe Directions for Mexi Casserole

  1. cook rice with no fat added

  2. spread it on the bottom of a baking dish

  3. mix sour cream and ranch dressing together and spread over rice

  4. cook pork in taco seasoning with a little water until seasoning incorporated and water is gone.

  5. Layer beans, chiles and then pork

  6. pour enchilada sauce over the top

  7. sprinkle with cheese

  8. bake 30min at 375F
