Recipe Ingredients for Mexi beans & rice

2 tablespoons green onion, chopped
2 tablespoons celery, chopped
1/2 teaspoon minced garlic
1/3 cup carrots, finely chopped
1/2 cup corn
8 ounces tomato sauce
1/4 teaspoon salt
1/4 cup salsa
2 cups brown rice
9 1/2 ounces black beans

Recipe Directions for Mexi beans & rice

  1. saute onions, celery, carrots, corn and garlic.

  2. Add tomato sauce and salsa

  3. Rinse beans

  4. cook rice as directed

  5. Add rice and beans, heat thoroughly.
