Recipe Ingredients for Mexcian Vegetable soup

1 tbsp olive oil
1 red onion
3 cloves garlic
4 carrots
2 stalks celery
4 cups Chayote Squash
2 pepper Anaheim Chile
1 zuchinni
1/2 pound green beans
1/2 pound asparagus
1 cup black beans
2 cup,+chopped+or+sliced tomatoes
2 cans chicken broth
1 tbsp chili powder
2 tsp ground cumin
1 tbsp cilantro

Recipe Directions for Mexcian Vegetable soup

Sweat the onions and garlic in the olive oil. Add the carrots, onion, and chayote and cook for a few minutes. Add the rest of the ingredients and simmer for 45 minutes.
