Mesclun is a French word meaning ?mix?, and mesclun greens are exactly that: a mix of young leafy greens. Spring is a great time of the year to make salads because there are so many different types of mesclun greens growing in the garden. Last week we cooked spinach; this week, use fresh spinach mixed with handfuls of any other greens like arugula, red leaf lettuce, green leaf lettuce, dandelion greens, and mustard greens. These greens are very low in calories, but they are high in vitamins and minerals like vitamin A, potassium, vitamin C, calcium, and phosphorus, which help with keeping eyes, bones, and hearts healthy!

Recipe Ingredients for Mesclun Greens and Apple Salad

6 cups Mesclun Salad
1 Apple Apples
4 medium (3/4" to 1" dia) Radishes
1/3 cup Craisins, Sweetened Dried Cranberries
1/2 tbsp chopped Shallots
1 oz Extra Virgin Olive Oil
1 1/4 oz Apple Cider Vinegar
0.17 oz Clover Honey

Recipe Directions for Mesclun Greens and Apple Salad

  1. Chop the shallots very small.

  2. Whisk (with a whisk or fork) the vinegar, oil, honey, salt and pepper together until combined.

  3. Add the shallots and mix together. Then stir in the cranberries or cherries (if using).

  4. Cut off roots and dirty ends of the mesclun greens. Gently wash the leaves well in cold water. Then break larger leaves (by hand) into bite-sized pieces and dry well. Keep the lettuces in the refrigerator until ready to mix

  5. Slice the radishes very thin.

  6. Quarter the apple by cutting it in half from stem to core end (lengthwise), and then cut each half through the core again. Remove the apple core and seeds. Then slice each quarter into thin slices. Always slice the apples last so they do not brown.

  7. In a large serving bowl, combine all of the cold mesclun greens with all of the dressing and gently toss the leaves to coat them with dressing. Then add the apples and toss it gently again.

  8. Top the salad with the dried fruit (if using) and a sprinkle of black pepper.
