I got this recipe from the book "Diabetic: Recipes for Health." The original recipe called for 3/4 cups of sugar and an egg, but I made my own substitutions, which lowered the calorie count. This is perfect for the Christmas season. ;-)

Recipe Ingredients for Merry Christmas Cut-Out Cookies

1 cup margarine
3/8 cup Splenda (for baking)
1/4 cup egg substitute
1 tsp vanilla
2 3/4 cups flour
1/2 tsp salt
1 cup uncooked oats

Recipe Directions for Merry Christmas Cut-Out Cookies

  1. Beat margarine until creamy.

  2. Gradually add sugar, beating until fluffy.

  3. Add egg substitute.

  4. Blend in the vanilla.

  5. Sift togehter flour and salt. Add to creamed mixture and blend well.

  6. Stir in oats.

  7. Chill dough at least one hour before rolling out.

  8. Roll out on lightly floured board or canvas to 1/8 inch thickness.

  9. Cut into desired shapes with floured cookie cutter.

  10. Place on greased cookie sheets.

  11. Bake in a preheated moderate oven at 350 degrees for about 10-12 minutes.

  12. Cool.

  13. Decorate with confectioner's sugar frosting (optional).
