Meringue with low fat yoghurt and fresh berries

Recipe Ingredients for Meringue, low fat yoghurt and berries

470 grams Sugar Pure Cane
8 large Egg, White
1 wedge yields(5 g) Lime Juice
500 grams Fat Free Plain
1 cup Blackberries
1 cup Raspberries

Recipe Directions for Meringue, low fat yoghurt and berries

  1. Preheat oven to 130C fanforced

  2. Beat the egg whites until they form stiff peaks, slowly sift in caster sugar and 1 tbsp of lime juice.

  3. Place egg white mixture onto two baking paper lined cookie sheets in the shape of a circle.

  4. Place in oven, turn oven down to 100.

  5. Bake for half an hour and then switch meringues around on shelves.

  6. Bake for a further half an hour.

  7. Turn oven off but leave door closed and allow to cool slowly for an hour.

  8. Finally crack the door open for approximately fifteen minutes before removing.

  9. Serve with a dollup of low fat yoghurt and a handful of fresh berries or other fruit.
