Traditional Turkish mercimek koftesi.

Recipe Ingredients for Mercimek Kofte

1 cup red lentils
1 cup bulgur, cooked
2 tablespoons olive oil
1 tablespoon tomato paste
1/2 tablespoon cumin
3 cups water
1/3 onion, chopped

Recipe Directions for Mercimek Kofte

  1. Boil red lentils in 3 cups of water until they are soft.

  2. Add in bulgur and allow to steam cook in hot red lentils and water (heat should already be turned off at this point).

  3. In another pan, heat olive oil and put in onion to sizzle. Then, add in tomato paste and mix well.

  4. Add in cooked bulgur and red lentils into olive oil, tomato paste and onion, mix well.

  5. Add in cumin, you may sprinkle in salt and pepper if desired. Turn off heat, and allow too cool.

  6. Make around 23 meatball-like cakes (around 50g each). You may serve with lettuce or add lemon juice on top for extra flavor or texture.
