A hearty Italian dish, pretty much the way my mother used to make it.

Recipe Ingredients for Menestra, Endive, with Beans, Bacon and Sausage

24 oz endive, raw
1 onion, medium
2 cloves garlic
31 oz great northern beans
60 grams bacon
8 links Italian sausage, mild
8 cups water
1 1/2 tbsp salt
1 tsp black pepper
1 dash cayenne pepper
1 dash basil, dried
1 dash oregano, dried
1 dash Italian seasoning, dried

Recipe Directions for Menestra, Endive, with Beans, Bacon and Sausage

  1. Cook bacon, break into 1/2" pieces, set aside.

  2. Cook sausage, set aside.

  3. Saute onion and garlic in some of the fat.

  4. Cut up endive and add stir into garlic and onion. Cook for about 5 minutes.

  5. Add all spices.

  6. Add water. Bring to a boil, then reduce heat.

  7. Add bacon and sausages. Simmer, covered, until tender (at least two hours).

  8. Add beans and simmer for an additional 30-60 minutes. Tip: temporarily remove sausages while adding beans.
